Our logo pays homage to history as it represents the cuneiform version of the first written word for beer known to us, found on an ancient clay tablet created about 5,000 years ago. Our brewing team is pushing the envelope every day on process improvement. Our equipment has been customized for us and made by hand only about 75 miles from our beloved city. The combination of our love for scientific advancement and our rich history serves to provide a variety of enjoyable beers made with care, excitement, and affection in the heart of Ravenswood.

Empirical brewery was conceived and developed in Chicago.

We love our city and are driven by our passion for providing great beer to those around us.  We source our equipment and ingredients locally and involve our community in our process.  Our neighbors are our partners, and we look for meaningful collaboration with local farmers, chefs, brewers, and others in our community.

The Empirical Method

Whether nomadic tribes first settled in order to make beer, or beer was a result of settlement  has been the subject of much debate. What is not the subject of debate is that humans have enjoyed beer for thousands of years since.  Beer deserves deep reverence and respect.

While the first beers were a result of the confluence of nature and neglect, beers today are mostly made with highly sophisticated machinery in very controlled environments.  We at Empirical are big believers in paying our respects to history while also availing of the vast brewing advances made in recent times and continually pushing the envelope, driven by the belief that there is always room for improvement.  In this vein, we use Empirical observations and feedback to drive continual improvements to our portfolio.
