BREWER NOTES: What we love in a great IPA is a firm, clean bitterness with a mix of pine, resin, and bright citrus aromas, all capped off with a snappy dry finish. We achieve that luscious imbalance by using copious amounts of American hops at every opportunity during the process. The result is a crisp, toasty, malt flavor that cowers before a massive hoppy bitterness and aroma, crawling its way from the glass to smack your taste buds around.

Chromatic Imperial Red Ale

9.0% ABV, 15.5 SRM, 45 IBU

MALTS: Munich Wheat, Pale Chocolate

HOPS: Ella, Pride of Ringwood

BREWER NOTES: As light shines through Chromatic Imperial Red Ale the color begins bright crimson and fades to the deepest garnet. This brew owes its mahogany hues to high quality German Munich Malt, which imparts a luxurious mouthfeel. Australian hops act to balance the rich, toasty malt flavors.

Singularity Oatmeal Stout

BREWER NOTES:  Singularity Oatmeal Stout is our attempt to compress a massive amount of oats into a sessionable stout recipe. Featuring both raw and malted oats, Singularity possesses an immensely full body and mouthfeel. Rich, roasty flavors of coffee and cocoa linger on the palate while a frothy, tan head blankets the beer down to the last sip.

BREWER NOTES: Up Quark Passion Fruit Pale Ale explores the superb collision of fruit and hops with juicy, tropical interactions that will make you yearn for warmer weather. Golden naked oats impart a nutty characteristic and, along with honey malt, give the base pale ale just the right amount of body and depth.


Resonance Honey Rye Cream Ale

5.5% ABV, 3.5 SRM, 18 IBU

BREWER NOTES:  We took two of our popular Taproom Series beers from the summer and combined the recipes. Resonance possesses all the crisp, fruity rye character that we enjoyed in Electric Blue Cream Ale along with a touch of the sweet floral goodness of orange blossom honey from Queenright Honey Kolsch.

Phase Transition Robust Porter

7.8% ABV, 29 SRM, 39 IBU

MALTS: Pale 2-Row, Chocolate Rye, Pale Chocolate, Extra Dark Crystal

HOPS: Willamette, US Goldings

OTHER: Piloncillo Brown Sugar

BREWER NOTES: While many American craft brewers are pushing the porter style to the extreme, our goal was to make a beer that plays on the subtleties of chocolate and dark fruit flavors. To that end, we used two chocolate malts backed up by some menacingly dark English crystal malt to yield notes of dried cherries, caramelized raisins, and pure dark chocolate. The addition of Mexican brown sugar brings an extra layer of complexity while allowing the beer to be dry, with a slight rummy finish.

Heliotropic Hoppy Pale Ale

MALTS: Rahr 2-Row, Rahr Wheat Malt, Flaked Rye, Weyermann Munich T1, Weyerman Carabelge

BREWER NOTES: Heliotropic Hoppy Pale is brewed with generous amounts of wheat and rye, producing a beer with a dense mouthfeel and spicy malt flavor. Comet hops impart bright notes of grapefruit and pineapple. Turn your face to the sun and enjoy this easy-drinking pale ale.

3rd Law Belgian Tripel

8.4% ABV, 4.5 SRM, 25 IBU

MALTS: Castle Chateau Pils, Wheat Malt, Weyermann Munich T1, Weyermann Accidulated

HOPS: Sterling

BREWER NOTES: After testing many variations of a Belgian-Style Tripel in our taproom, we settled on a simple recipe consisting of only three malts. High quality Belgian Pilsner malt brings a cracker-like flavor while a token addition of German Munich and Wheat Malt provides additional malty aromatics and a dense, rocky head. Fermented with the same Belgian yeast blend as 1st Law and highly carbonated, the beer finishes dry and effervescent.

HOPS: Santiam, Saaz

OTHER: Ginger Root, Lime Peel, Black Peppercorn

BREWER NOTES: We began with a classic Witbier malt bill, then added our own twist. Instead of coriander and orange peel, we tossed in fresh ginger root, lime zest, and cracked black peppercorns. The body of this beer is light and spritzy, with just a touch of acidulated malt to help round out all the flavors and make the ginger and lime sing. Gamma-Ray pairs with food beautifully and is fantastic on a hot day.

Double Helix Imperial IPA

9.8% ABV, 7 SRM, 65 IBU

MALTS: Pale 2-row, Biscuit, Wheat, Crystal 45

HOPS: Warrior, Cascade, Simcoe

BREWER NOTES: Double Helix is the marriage of two of classic American hops - Cascade and Simcoe. The former brings a clean citrus punch while the latter provides a dank melange of tropical fruits. The toasty malt profile contributes just enough balance to keep the hoppy intensity in check. Grab your base pairs and brace yourself.

1st Law Belgian Table Beer

4.8% ABV, 5.5 SRM, 18 IBU

MALTS: Pilsner, Vienna, Wheat

HOPS: Saaz

BREWER NOTES: Belgian table beer, or Patersbier, was originally brewed by monks for personal consumption. 1st Law is a low-alcohol, straw-colored ale with a clean, bready malt profile. A complex aromatic bouquet of green pear and dried apricot is the result of fermentation with a unique blend of Belgian yeasts. This is a beer intended to be consumed at any time of day.
