Wild Gamma Ray started back in 2019 when we fermented the beer with a mixture of Saccharomyces, Brettanomyces and Pediococcus with the addition of grapefruit. After two years of developing its unique flavor we “dry hopped” the beer with pink peppercorns and more grapefruit. The result is a blend between funk and fruit where neither stand out alone, but compliment each other in a harmonious way. Grapefruit, lime, spice and dried fruit coat the mouth with a background of earthy funk.
